For our money the best and easiest to use prepared pasta is Tinkyada's.  The lasagne noodles are
excellent.  If you're willing to make your own pasta, don't be shy about trying Bette Hagman's recipes from her Gluten Free Gourmet cookbooks.  Also, experiment with substituting low fat cottage cheese for ricotta for a cheesier, more sturdy, layer.

GF Cookie Recipe experimentation

Spent part of today experimenting with substitutes for chestnut flour which we love, but is expensive.  Try using a percentage of sweet sorghum (Bob's Red Mill) with your standard GF flour mix.

Baking and Blogging!

Hello gus' fans!

Now we're online!  We will be using this forum for updates on the newest Gus' products, recipe development and recommendations, and restaurant finds.  Please feel free to ask questions, post comments, and share stories about everything GF.
